Anissa gave me this recipe and out of fear of losing the random piece of paper I wrote it on, I thought this blog would be a better place for it.
12 oz. penne pasta
2 T. olive oil
6 slices bacon
2 T. minced garlic
14 oz. diced tomatoes
1 bunch baby spinach
Boil pasta 8-10 min. Add 1 T. of oil to skillet, cook bacon on medium heat. Add garlic and stir in tomatoes. Cook until heated through. Put spinach in colandar and drain pasta over it. In serving bowl, add 1 T. oil before adding other ingredients. Stir all together. Delicious.
