3/4 C. flour
1 tsp. baking powder
1/2 tsp. salt
3 T. butter, softened
1 egg
1/2 C. milk
3 oz. pkg cook n' serve vanilla pudding mix
Combine the above ingredients in a large bowl; beat with an electric mixer for 2 min. Pour into a greased 9" pie plate.
16 oz. can sliced peaches, drained
5 T. juice reserved
8 oz pkg cream cheese, softened
1/2 C. sugar
garnish: cinnamon & sugar to taste
Arrange peach slices on top; set aside. Beat together cream cheese, sugar & reserved juice for 2 minutes. Spoon over peaches. Sprinkle with cinnamon & sugar. Bake @ 350 for 30 min.
